Yum! Nothing like fresh, hot biscuits for breakfast! But most biscuit recipes have some undesirable ingredients which for some could contribute to high blood pressure and high cholesterol because of the sodium and dairy content, not to mention those with wheat sensitivities. Well, I think I have an answer to the problem. Try this alternative to the typical white flour, high salt, version.
Ingredients: 3 C. Spelt Flour 2 t. Baking Powder 2 t. Baking Soda 1/2 t. Sea Salt 1 t. Honey or Unrefined Sugar 3/4 C. Vegan Margarine or Virgin Unrefined Coconut Oil 1 1/2 C. Warm Water Preheat oven to 425 degrees. Place all ingredients in food processor and pulse until all ingredients are mixed and crumbly. Pour ingredients into a mixing bowl and add water. Mix just enough to incorporate. Dough will be sticky. Place onto floured countertop and fold once or twice. Don't overwork dough. Add flour to keep from sticking. Pat down to about 1/2-1" thick and cut out using a glass or mason jar lid. Place onto oiled cookie sheet. (I like to use a piece of parchment paper). Brush margarine on top of biscuits. Bake in oven for about 15-20 minutes until brown. Try our White Sunflower Seed Gravy to go on top!
